Sparkling wines from England are without doubt now recognised for their wonderful quality and off the back of our Gold Medal winning Blanc de Noirs 2019 in 2020 we produced a Blanc de Blancs from 100% Chardonnay.
The grapes for this traditional method bubbles were sourced from a single vineyard in West Marden, West Sussex. A wonderful year for quality, the berries were hand harvested, transported to London, and gently whole bunch pressed.
Primary fermentation was completed in temperature controlled stainless tanks and neutral French oak barrels, full malolactic fermentation was conducted, and then the wine was aged on lees for 6 months.
Bottled by gravity for secondary fermentation in our Fulham winery, the wine had extended lees bottle ageing for close to three years. Disgorged and dosed in Jan 2023.
Nose: Clean, lively, fruit forward, cooked pear, red apple and a touch of caramel
Mouth: Very fine bubbles, pleasant balance of freshness with fruit, vibrant, and classy. Palate leads to greener apple and candied lemon peel
Conclusion: A very well balanced classical English Sparkling wine that will pair well with any occasion.
Food: As an aperitif, grilled local seafood, ceviche, or baked pear tart
