The warmer 2022 vintage allowed the Pinot Gris from West Sussex to get wonderfully ripe resulting in berries with a beautiful pastel pink / copper hue. The grapes were hand harvested, destemmed, and left for 5 days in concrete tank to capture this stunning colour and extract aromas and texture from the skins.
Through this process the wine started a natural fermentation, it was then gently pressed, and fermentation was completed in temperature controlled stainless tank and our modern egg tank.
Malolactic fermentation was partially completed and the wine was then bottled in the Traditional method with a tirage of 24g/L of sugar to create the perfect fizz with the help of the yeast.
After secondary fermentation the wine was disgorged early to ensure we capture the grapefruit and tropical fruit character.
This Pinot Gris Rosé is a refinement of the PétNat style we have become so well known for over the last three vintages.

Nose: Fruit driven, young primary red berries, and ripe apricot

Mouth: Fizzy freshness, with a sherbet stone fruit flavour and a textured finish from skin contact

Conclusion: A low intervention wine, the most natural in our range, wild and free spirited. *May contain wine diamonds, serve extra chilled
