Producer Profile
The Biscardo Family have been making wine from their base in Soave for over 150 years and are currently led by brothers Maurizio and Martino. During the course of Maurizio’s long and illustrious career, he has consulted for well known wineries around Italy and in doing so he came across the vineyards for their Puglian wines. Both the Pugliese and Veneto wines are characterised by an almost dangerous drinkability, aromatic purity and exceptional value for money.
Viticulture
This Pinot Grigio comes from vines which are 10-15 years old, part grown on the plain with limestone subsoil, and the rest on the slopes and terraces of the surrounding hills. This particular location gives the wine a delicate minerality, important structure and typical floral fragrances.
Winemaking
The grapes are hand harvested and then placed in wooden cases – this is usually done at dawn or late in the evening to avoid the intense heat of the day. Clusters picked during fresh hours remain intact: this means that there is no risk of fermentation during transport. Once the grapes arrive in the vinification cellar, they are pressed immediately and the most is then fermented under controlled temperature in stainless steel tanks. The skins are generally kept in the tank for a long time together with all other natural chemical substances so that they can release the colours with more intensity. The fermentation temperature is maintained at around 20°/23°C. Once the wine has fermented, it is placed in little tanks (150 hectoliters) where it rests for at least 4 months.
